3 cans(16 oz) pork and beans
1 1/2 cups ketchup
1/2 large chopped onion
3 Tbsps brown sugar
3 Tbsps Worcestershire sauce
1 Tbsp white vinegar
1/2 tsp chili powder
squirt of tabasco
Mix all ingredients and you can either cook it on the stove top till it boils or transfer to an ungreased, covered baking dish and bake at 350 F for 30-35 minutes.
This recipe came from Cathy Weidner. It was printed in the Taste of Home bonus book. I like to eat this over rice and make cornbread with it.

Cocoa Rice
1 can coconut milk
2 1/4 cups of rice
1/2 cup Hershey's cocoa
A ton of sugar
16 cups water
Put the rice in a big boiling pan and add approximately 16 cups of water. Bring to a boil on high heat and then turn it down to med-hi heat and continue to boil until rice is done. There should be quite a bit of water still in the pan. While rice is boiling, whisk together coconut milk and Hershey's cocoa. When the rice is done, remove pan from stove and pour in coconut milk, cocoa mixture. Then add enough sugar to your liking ( I usually end up with 3-4 cups of sugar)
Not the healthiest thing to eat, but it sure tastes yummy!

Kalua Pork
This is so yummy and I don't know exactly where the recipe came from.
3 lbs. Pork roast
1 Tbsp rock salt
2 tsp liquid smoke
2 tsp garlic powder
2 cups of water
Mix all the ingredients in a crock pot. Add the roast and cook on high for 1 hour and low 6-8 hours. I usually put mine in frozen and cook on high for 4-5 hours. Then I cut it up into smaller pieces and turn on low for another 3 hours. 1 hour before it is done cooking I will shred the meat to really soak in the juices.
This goes well with cooked cabbage and rice.

Hamburgers
Make your own hamburger patties and them sprinkle garlic powder and lemon pepper seasoning on them. Making your own hamburger patties allows them to not be so dry!

Meatloaf
2 lbs hamburger
1 diced bell pepper (I prefer the red)
2 packages Western Family meatloaf seasoning (has to be Western Family)
bread crumbs
2 eggs
Mix all all ingredients real well in a bowl (don't follow the seasoning packet recipe). Put into 7x11 pan and pour lots of ketchup to cover the entire meatloaf. Bake at 350 F for an hour.
I used to hate meatloaf as a little kid, but now it is one of favorite meals on Sundays to cook. I love to sprinkle a little tobasco on top of my own serving. It gives it a little kick. I also like to serve Jello (tropical fusion is my favorite) with madarin oranges and pineapple chunks mixed in. And, the other favorite, baked potatoes. Easy meal to make and taste is yummy!

Pesto Sauce (Cajsa)
1/2 cup fresh basil leaves
1/4 cup pine nuts or blanched almonds
1/4 cup grated parmesan cheese
2 garlic cloves
6 Tbsp olive oil
1 Tbsp lemon juice
1/8 tsp salt
fresh ground pepper to taste
Mix all ingredients in blender or food processor.
This goes really well over spaghetti noodles. Cube some chicken and cook it with chopped onions and 1 garlic clove minced. Just pour the pesto sauce over the spaghetti and chicken, then stir.
Or you could make a good chicken pesto sandwich with it by cubing the chicken and cooking it with a diced green pepper and onions. Toast the bread and make a sandwich with the sauce and chicken garnished with tomatoes and lettuce.
